- 4 chicken thighs
- 4 chicken drumsticks
- 1 cup plain yogurt
- 2 tablespoons tandoori spice mix
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 red onion, sliced
- 1 bell pepper, sliced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix yogurt, tandoori spice mix, olive oil, lemon juice, salt, and pepper.
- Add chicken thighs and drumsticks to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes.
- Place the marinated chicken on a baking tray along with sliced onion and bell pepper.
- Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and has a nice char.
- Garnish with fresh cilantro before serving.
Notes
- For extra flavor, marinate the chicken overnight.
- Serve with rice or naan for a complete meal.
- Adjust the spice level by adding more or less tandoori spice mix.
