- 4 tilapia fillets
- 2 red bell peppers
- 1 yellow bell pepper
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Roast the bell peppers in the oven for about 20 minutes until the skin is charred.
- Remove the peppers from the oven, let them cool, then peel off the skin and remove the seeds.
- In a blender, combine the roasted peppers, garlic, olive oil, salt, and black pepper. Blend until smooth.
- In a skillet, heat the roasted pepper sauce over medium heat.
- Add the tilapia fillets to the skillet and cook for about 4-5 minutes on each side, or until the fish is cooked through.
- Garnish with fresh parsley before serving.
