  • 4 large boneless, skinless chicken breasts
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup sliced pepperoni (approximately 16 slices)
  • 1/2 cup sugar-free marinara sauce
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F.
  2. Prepare the chicken breasts by cutting a deep pocket into each without slicing all the way through.
  3. Add about 1 tablespoon of marinara sauce into each pocket, followed by mozzarella and pepperoni. Secure with toothpicks if necessary.
  4. Sear the chicken in a hot oven-safe skillet for 2 to 3 minutes per side.
  5. Spoon remaining marinara sauce over the chicken and top with extra mozzarella and Parmesan.
  6. Bake for 15 to 18 minutes until the internal temperature reaches 165°F.
  7. Rest for 2 to 3 minutes, remove toothpicks, and serve hot.
