- 4 large boneless, skinless chicken breasts
- 3/4 cup shredded mozzarella cheese
- 1/4 cup sliced pepperoni (approximately 16 slices)
- 1/2 cup sugar-free marinara sauce
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 400°F.
- Prepare the chicken breasts by cutting a deep pocket into each without slicing all the way through.
- Add about 1 tablespoon of marinara sauce into each pocket, followed by mozzarella and pepperoni. Secure with toothpicks if necessary.
- Sear the chicken in a hot oven-safe skillet for 2 to 3 minutes per side.
- Spoon remaining marinara sauce over the chicken and top with extra mozzarella and Parmesan.
- Bake for 15 to 18 minutes until the internal temperature reaches 165°F.
- Rest for 2 to 3 minutes, remove toothpicks, and serve hot.
