A comforting and flavorful Nigerian okra soup that blends the richness of palm oil and the earthiness of fresh okra with tender meats.
Ingredients

- 1 lb Okra (fresh or frozen)
- 1/2 cup Palm Oil
- 1 lb Meat (beef, goat, or chicken)
- 1/2 cup Stockfish or dried fish
- 1/4 cup Ground Crayfish
- 2 Seasoning cubes
- Salt to taste
- Black pepper to taste
- 4 cups Water
Instructions
- Boil the meat by bringing a pot of water to a boil. Add the beef or chosen meat, cooking until tender.
- Add the stockfish and allow it to simmer with the meat over medium heat.
- Incorporate the palm oil, stirring well and seasoning with salt and seasoning cubes.
- Chop the okra into small pieces and add it to the pot, mixing gently.
- Mix in the ground crayfish and pepper, adjusting the heat to your preference.
- Simmer the soup for a few minutes until the okra reaches tenderness. Serve hot.
Notes
Pair with fufu or rice for a complete meal. Customize with additional vegetables if desired.
