Description

A comforting and flavorful Nigerian okra soup that blends the richness of palm oil and the earthiness of fresh okra with tender meats.


Ingredients

Scale
  • 1 lb Okra (fresh or frozen)
  • 1/2 cup Palm Oil
  • 1 lb Meat (beef, goat, or chicken)
  • 1/2 cup Stockfish or dried fish
  • 1/4 cup Ground Crayfish
  • 2 Seasoning cubes
  • Salt to taste
  • Black pepper to taste
  • 4 cups Water

Instructions

  1. Boil the meat by bringing a pot of water to a boil. Add the beef or chosen meat, cooking until tender.
  2. Add the stockfish and allow it to simmer with the meat over medium heat.
  3. Incorporate the palm oil, stirring well and seasoning with salt and seasoning cubes.
  4. Chop the okra into small pieces and add it to the pot, mixing gently.
  5. Mix in the ground crayfish and pepper, adjusting the heat to your preference.
  6. Simmer the soup for a few minutes until the okra reaches tenderness. Serve hot.

Notes

Pair with fufu or rice for a complete meal. Customize with additional vegetables if desired.
