- 4 large russet potatoes
- 2 cups cooked pulled pork
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled crispy bacon
- 2 tablespoons chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Bake the potatoes for about 45-60 minutes until tender.
- Mix the pulled pork with ranch dressing, half of the cheddar cheese, and half of the bacon.
- Cool the potatoes and cut each in half lengthwise, scooping out some insides.
- Stuff each potato with the pulled pork mixture and top with remaining cheese and bacon.
- Bake again for 10-15 minutes until fluffy and cheese is bubbly.
