- 2 lb strawberries (hulled and sliced)
- 1 pint blueberries
- 8 ounces mozzarella pearls (drained)
- Handful fresh basil (chiffonade)
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- ¼ cup olive oil
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Prep the produce & cheese: Clean and hull strawberries, slice them uniformly, drain mozzarella pearls, and chiffonade the basil.
- Make the dressing: In a small bowl, combine balsamic vinegar, olive oil, honey, salt, and pepper. Whisk until emulsified.
- Combine the salad: Toss together strawberries, blueberries, mozzarella, and basil in a large bowl.
- Dress & rest: Pour dressing over salad, gently toss, and let rest at room temperature for 15 minutes before serving.
Notes
For added crunch, consider adding sugared almonds just before serving. Store leftover salad in an airtight container and consume within one day.
