Description

Tender slow-cooked beef with a creamy horseradish spread nestled in pillowy sliders for a delightful dining experience.


Ingredients

  • 2 lbs beef chuck roast
  • 1 tbsp avocado oil
  • Sea salt
  • 1 large sweet onion (sliced)
  • 6 medium garlic cloves (finely sliced)
  • 2 tsp sea salt
  • Ground black pepper (to taste)
  • 2 tsp chipotle chili powder
  • 2 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp dried garlic
  • 1 tsp dried onion
  • 1 tsp sugar
  • 2 bay leaves
  • 2 cups water
  • 1/2 cup mayonnaise
  • 3 tbsp horseradish
  • 1/2 tsp dried garlic
  • 1/2 tsp smoked paprika
  • Ground black pepper (to taste)
  • 1/2 tsp sea salt
  • 2 tbsp fresh chopped chives
  • 2 tbsp fresh chopped parsley
  • 10 small dinner rolls
  • 5 slices Havarti cheese (cut in half)

Instructions

  1. Season the beef chuck roast with sea salt and ground black pepper.
  2. Heat the avocado oil in a large skillet over medium heat, then add the sliced sweet onion.
  3. Cook until golden brown and caramelized, then stir in the finely sliced garlic for another minute.
  4. Transfer the mixture to the slow cooker and place the seasoned beef roast on top.
  5. Sprinkle chipotle chili powder, smoked paprika, ground coriander, ground cumin, dried garlic, dried onion, sugar, bay leaves, and additional sea salt over the beef.
  6. Add two cups of water to the slow cooker.
  7. Cover and cook on low for 8 hours, or until the beef is fork-tender.
  8. In a mixing bowl, combine mayonnaise, horseradish, dried garlic, smoked paprika, sea salt, and ground black pepper for the spread.
  9. Fold in the chopped chives and parsley, then set aside.
  10. Once the beef is done, remove it and shred with two forks, discarding excess fat.
  11. Toast dinner rolls until golden brown.
  12. Layer shredded beef on each slider roll, add half a slice of Havarti cheese, and spread horseradish mix on the top half.
  13. Cap the sliders with the top halves of the rolls and serve immediately.

Notes

Prepare beef filling a day in advance for enhanced flavor. Use an Instant Pot for quicker preparation if needed.
