Tender slow-cooked beef with a creamy horseradish spread nestled in pillowy sliders for a delightful dining experience.

- 2 lbs beef chuck roast
- 1 tbsp avocado oil
- Sea salt
- 1 large sweet onion (sliced)
- 6 medium garlic cloves (finely sliced)
- 2 tsp sea salt
- Ground black pepper (to taste)
- 2 tsp chipotle chili powder
- 2 tsp smoked paprika
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp dried garlic
- 1 tsp dried onion
- 1 tsp sugar
- 2 bay leaves
- 2 cups water
- 1/2 cup mayonnaise
- 3 tbsp horseradish
- 1/2 tsp dried garlic
- 1/2 tsp smoked paprika
- Ground black pepper (to taste)
- 1/2 tsp sea salt
- 2 tbsp fresh chopped chives
- 2 tbsp fresh chopped parsley
- 10 small dinner rolls
- 5 slices Havarti cheese (cut in half)
Instructions
- Season the beef chuck roast with sea salt and ground black pepper.
- Heat the avocado oil in a large skillet over medium heat, then add the sliced sweet onion.
- Cook until golden brown and caramelized, then stir in the finely sliced garlic for another minute.
- Transfer the mixture to the slow cooker and place the seasoned beef roast on top.
- Sprinkle chipotle chili powder, smoked paprika, ground coriander, ground cumin, dried garlic, dried onion, sugar, bay leaves, and additional sea salt over the beef.
- Add two cups of water to the slow cooker.
- Cover and cook on low for 8 hours, or until the beef is fork-tender.
- In a mixing bowl, combine mayonnaise, horseradish, dried garlic, smoked paprika, sea salt, and ground black pepper for the spread.
- Fold in the chopped chives and parsley, then set aside.
- Once the beef is done, remove it and shred with two forks, discarding excess fat.
- Toast dinner rolls until golden brown.
- Layer shredded beef on each slider roll, add half a slice of Havarti cheese, and spread horseradish mix on the top half.
- Cap the sliders with the top halves of the rolls and serve immediately.
Notes
Prepare beef filling a day in advance for enhanced flavor. Use an Instant Pot for quicker preparation if needed.
