Description

A delightful dish that marries juicy chicken breasts with vibrant blueberries and fresh thyme for an extraordinary culinary experience.


Ingredients

  • 4 Chicken Breasts
  • 1 cup Fresh Blueberries
  • 2 tablespoons Fresh Thyme
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • Salt to taste
  • Pepper to taste
  • Juice of 1 Lemon
  • 2 tablespoons Honey

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine olive oil, minced garlic, lemon juice, honey, salt, and pepper in a mixing bowl.
  3. Whisk until all ingredients meld into a thick marinade.
  4. Add the chicken breasts to the marinade, making sure they are completely coated.
  5. Let them soak in the flavors for at least 30 minutes.
  6. Place the marinated chicken breasts in a baking dish.
  7. Scatter fresh blueberries and thyme over the chicken.
  8. Bake for 25-30 minutes or until the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
  9. Let it rest for a few minutes before serving.

Notes

Marinade the chicken overnight for better flavor. This dish can also be prepared in an air fryer at 380°F (193°C) for 15-20 minutes.
