Ingredients

  • 1 cup All-Purpose Flour (or gluten-free flour)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1/4 cup Granulated Sugar
  • 1/4 teaspoon Salt
  • 1 large Egg Yolk
  • 24 tablespoons Ice Water
  • 2 cups Fresh Blackberries (or raspberries/blueberries)
  • 1/2 cup Granulated Sugar (adjust as necessary)
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Cornstarch
  • 1/2 cup Light Brown Sugar (or granulated sugar)
  • 1 teaspoon Baking Powder
  • 1 cup Pistachios (shelled and unsalted)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine flour, granulated sugar, and salt in a mixing bowl and cut in cold butter until crumbly.
  3. Stir in egg yolk and enough ice water until the dough comes together.
  4. Press the dough evenly into the bottom of a 9×9-inch baking pan and prick with a fork.
  5. Bake for 15-20 minutes until lightly golden.
  6. Combine blackberries, sugar, lemon juice, and cornstarch in a saucepan; cook until bubbling (5-7 minutes).
  7. Blend brown sugar, pistachios, cold butter, and baking powder until crumbly; whisk in egg and vanilla extract.
  8. Pour the blackberry mixture over the crust and crumble the pistachio topping on top.
  9. Bake for an additional 25-30 minutes until topping is set and golden.
  10. Cool in the pan for at least 30 minutes before slicing into squares.
  11. Serve and enjoy! Optionally dust with powdered sugar.

Notes

Use cold butter for a flaky texture. Bars can be made ahead of time and stored in an airtight container.
