- 1/4 cup Granulated Sugar

- 1 large Egg Yolk
- 2–4 tablespoons Ice Water
- 2 cups Fresh Blackberries (or raspberries/blueberries)
- 1/2 cup Granulated Sugar (adjust as necessary)
- 1 tablespoon Lemon Juice
- 2 tablespoons Cornstarch
- 1/2 cup Light Brown Sugar (or granulated sugar)
- 1 teaspoon Baking Powder
- 1 cup Pistachios (shelled and unsalted)
- 1/2 cup Unsalted Butter (cold and cubed)
- 1 large Egg
- 1 teaspoon Vanilla Extract
Instructions
- Preheat the oven to 350°F (175°C).
- Combine flour, granulated sugar, and salt in a mixing bowl and cut in cold butter until crumbly.
- Stir in egg yolk and enough ice water until the dough comes together.
- Press the dough evenly into the bottom of a 9×9-inch baking pan and prick with a fork.
- Bake for 15-20 minutes until lightly golden.
- Combine blackberries, sugar, lemon juice, and cornstarch in a saucepan; cook until bubbling (5-7 minutes).
- Blend brown sugar, pistachios, cold butter, and baking powder until crumbly; whisk in egg and vanilla extract.
- Pour the blackberry mixture over the crust and crumble the pistachio topping on top.
- Bake for an additional 25-30 minutes until topping is set and golden.
- Cool in the pan for at least 30 minutes before slicing into squares.
- Serve and enjoy! Optionally dust with powdered sugar.
Notes
Use cold butter for a flaky texture. Bars can be made ahead of time and stored in an airtight container.
