Description

Delightful Cherry Cobbler Muffins combining sweet, tart cherries with a rich, buttery batter for a perfect treat.

Ingredients

Scale
  • 1 ½ cups Fresh Cherries, pitted and chopped
  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 2 teaspoons Baking Powder
  • 2 Eggs, beaten
  • ½ cup Butter, melted
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the muffin tin by greasing it or lining with paper liners.
  3. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, and baking powder.
  4. Combine the wet ingredients: In another bowl, mix melted butter, eggs, and vanilla.
  5. Create the batter by pouring wet into dry and stirring gently until just mixed.
  6. Fold in the cherries, distributing them evenly throughout.
  7. Fill each muffin cup about 3/4 full with batter.
  8. Bake for 20-25 minutes until golden brown; a toothpick should come out clean.
  9. Cool slightly in the tin, then transfer to a wire rack to enjoy warm.

Notes

Consider adding spices like cinnamon or nutmeg for extra flavor. They can also be made ahead and refrigerated overnight.
