A classic yet luxurious Chicken Avocado Melt Sandwich featuring crispy bread, tender chicken, creamy avocado, and melted cheese, perfect for lunch or dinner.

- 2 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling
Instructions
- Prepare the chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook for 6–7 minutes per side until cooked through. Remove and let rest before slicing.
- Prep the avocado and cheese: Slice the avocado and set the cheese aside.
- Prepare the bread: Spread mayonnaise and Dijon mustard on one side of each slice.
- Assemble the sandwiches: Layer chicken, avocado, cheese, onion, and tomato on two slices of bread, topping with the mayo side down.
- Grill the sandwiches: In the skillet, add butter and grill sandwiches for 3–4 minutes per side until golden and crispy.
- Serve: Remove, let cool, slice in half, and enjoy warm!
