Description

A classic yet luxurious Chicken Avocado Melt Sandwich featuring crispy bread, tender chicken, creamy avocado, and melted cheese, perfect for lunch or dinner.


Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook for 6–7 minutes per side until cooked through. Remove and let rest before slicing.
  2. Prep the avocado and cheese: Slice the avocado and set the cheese aside.
  3. Prepare the bread: Spread mayonnaise and Dijon mustard on one side of each slice.
  4. Assemble the sandwiches: Layer chicken, avocado, cheese, onion, and tomato on two slices of bread, topping with the mayo side down.
  5. Grill the sandwiches: In the skillet, add butter and grill sandwiches for 3–4 minutes per side until golden and crispy.
  6. Serve: Remove, let cool, slice in half, and enjoy warm!
