Description

A luxurious breakfast sandwich featuring creamy chipotle aioli, fluffy scrambled eggs, savory sausage, and melty cheddar on buttery brioche buns.


Ingredients

  • 1/2 cup mayonnaise
  • 12 chipotle peppers in adobo sauce, minced (plus 1 tsp of the sauce)
  • 1 tsp lime juice
  • 1/4 tsp garlic powder
  • 2 brioche buns (split)
  • 2 sausage patties
  • 4 large eggs
  • 2 tbsp milk
  • 2 slices cheddar cheese
  • 1 tbsp butter
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Combine mayonnaise, minced chipotle peppers, adobo sauce, lime juice, and garlic powder in a small bowl and whisk until smooth.
  2. Heat a large skillet over medium-high heat and cook the sausage patties for 3-4 minutes per side.
  3. Toast the cut sides of the brioche buns in the skillet with butter for 1-2 minutes until golden brown.
  4. Whisk together eggs, milk, salt, and pepper in a mixing bowl.
  5. Pour egg mixture into the skillet and cook gently, stirring occasionally for fluffy scrambled eggs.
  6. Assemble the sandwich by spreading chipotle aioli on toasted buns, layering with sausage, eggs, and cheese.

Notes

Make the aioli a day ahead for better flavor; you can also use an air fryer for sausage.
