- 1/2 cup mayonnaise
- 1–2 chipotle peppers in adobo sauce, minced (plus 1 tsp of the sauce)
- 1 tsp lime juice
- 1/4 tsp garlic powder
- 2 brioche buns (split)
- 2 sausage patties
- 4 large eggs
- 2 tbsp milk
- 2 slices cheddar cheese
- 1 tbsp butter
- Salt and freshly ground black pepper (to taste)
Instructions
- Combine mayonnaise, minced chipotle peppers, adobo sauce, lime juice, and garlic powder in a small bowl and whisk until smooth.
- Heat a large skillet over medium-high heat and cook the sausage patties for 3-4 minutes per side.
- Toast the cut sides of the brioche buns in the skillet with butter for 1-2 minutes until golden brown.
- Whisk together eggs, milk, salt, and pepper in a mixing bowl.
- Pour egg mixture into the skillet and cook gently, stirring occasionally for fluffy scrambled eggs.
- Assemble the sandwich by spreading chipotle aioli on toasted buns, layering with sausage, eggs, and cheese.
Notes
Make the aioli a day ahead for better flavor; you can also use an air fryer for sausage.
