Description

Indulge in rich flavors with these stunning Chocolate Raspberry Cheesecake Domes, featuring a decadent chocolate shell filled with creamy cheesecake and vibrant raspberries.


Ingredients

  • 200g chocolate (for the shell)
  • 250g cream cheese
  • 100g sugar
  • 100g raspberries (fresh or puree)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 100g chocolate cake (for the base)
  • Silicone molds

Instructions

  1. Melt the chocolate: Chop the chocolate finely and place it in a saucepan over low heat. Stir continuously until smooth and melted. Use a brush or spoon to coat the silicone molds with an even layer, then refrigerate for about 30 minutes to set.
  2. Prepare the filling: In a large mixing bowl, beat cream cheese and sugar together until fluffy and smooth. Incorporate raspberry puree and vanilla extract, mixing well.
  3. Add the eggs: Crack in the eggs one at a time, mixing well after each addition.
  4. Fill the molds: Once the chocolate is set, pour the cheesecake filling into the prepared chocolate shells, leaving space for the cake base. Use a spatula to smooth the mixture.
  5. Cut your cake: Use a cookie cutter or glass to cut small circles from your chocolate cake. Press one cake circle into each dome over the cheesecake filling.
  6. Seal with chocolate: Melt remaining chocolate and drizzle it over the tops of the cake circles to seal in the filling. Refrigerate until fully set, about 1 hour.
  7. Demold and serve: Carefully peel away the silicone mold. Place the domes on a serving platter.

Notes

These domes can be prepared 1-2 days in advance and stored in an airtight container in the fridge. You can also customize the filling by using different fruits or adding liqueur.
