Description

A tropical dish that combines creamy coconut milk with juicy mango and flaky fish for a flavorful experience.


Ingredients

  • 4 white fish fillets (tilapia or cod)
  • 1 cup coconut milk
  • 2 ripe mangoes, peeled and diced
  • 1 red bell pepper, sliced
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked jasmine rice for serving

Instructions

  1. Prepare the fish by seasoning fillets generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and grated ginger, sautéing for 1-2 minutes.
  4. Cook sliced red bell pepper for another 2-3 minutes.
  5. Create the sauce by pouring in coconut milk, lime juice, and fish sauce.
  6. Incorporate diced mango into the skillet gently.
  7. Add the seasoned fish fillets and spoon sauce over them.
  8. Simmer gently for 8-10 minutes until fish flakes easily.
  9. Adjust flavors with more salt or lime juice as needed.
  10. Serve over jasmine rice with fresh cilantro.
