- 4 chicken thighs (bone-in, skin-on)
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 teaspoons dried herbs (e.g., thyme, rosemary)
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, peeled and sliced
- 3 tablespoons honey
Instructions
- Sear the chicken: Heat the olive oil in a skillet over medium heat. Season chicken thighs with salt, pepper, and herbs. Sear for 6-7 minutes until browned, then flip and cook an additional 6-7 minutes. Transfer to a plate.
- Create the cream sauce: Deglaze the skillet with heavy cream, simmering gently while placing the chicken back in to soak.
- Prepare the mashed potatoes: Boil the cubed potatoes in salted water until tender, drain, add milk and butter, then mash until smooth.
- Sauté the carrots: Sauté sliced carrots in olive oil until tender, drizzle honey, and cook an additional 2 minutes until caramelized.
- Serve: Plate the chicken with mashed potatoes and honey-glazed carrots, drizzling extra cream sauce over the chicken if desired.

Make ahead by preparing the chicken and sauce a day prior. Customize by adding vegetables or using alternative sweeteners.
