Description

Experience the vibrant flavors of elote, Mexican street corn, grilled to perfection and topped with creamy goodness, cotija cheese, and zesty lime.


Ingredients

  • 4 ears of corn
  • 1 lime
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese

Instructions

  1. Preheat the grill to medium-high, around 400°F (200°C).
  2. Prepare the corn by soaking in water for about 30 minutes.
  3. Grill the corn for about 8-10 minutes, turning occasionally, until charred and tender.
  4. Make the creamy mixture by combining mayonnaise, sour cream, and garlic powder in a bowl.
  5. Prepare the cotija by crumbling it onto a plate.
  6. Cut the lime into wedges.
  7. Coat the grilled corn with the creamy mixture.
  8. Roll the corn in the crumbled cotija cheese.
  9. Sprinkle chili powder over the corn to taste.
  10. Serve immediately with lime wedges on the side.
