Instructions
- Preheat the grill to medium-high, around 400°F (200°C).
- Prepare the corn by soaking in water for about 30 minutes.
- Grill the corn for about 8-10 minutes, turning occasionally, until charred and tender.
- Make the creamy mixture by combining mayonnaise, sour cream, and garlic powder in a bowl.
- Prepare the cotija by crumbling it onto a plate.
- Cut the lime into wedges.
- Coat the grilled corn with the creamy mixture.
- Roll the corn in the crumbled cotija cheese.
- Sprinkle chili powder over the corn to taste.
- Serve immediately with lime wedges on the side.
