- 8 soft hot dog buns
- ¼ cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder

- 1 cup shredded sharp cheddar cheese (or pepper jack)
- ½ cup diced red onions
- ½ cup sliced jalapeños (optional)
- Fresh cilantro leaves
Instructions
- Make the Firecracker Sauce: In a small bowl, whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and fresh lime juice until smooth.
- Prep the Toppings: Dice red onions and slice jalapeños. Shred cheese and chop cilantro.
- Heat the Grill: Preheat your grill to medium-high heat.
- Grill the Hot Dogs: Cook the hot dogs for about 5-7 minutes, turning occasionally.
- Toast the Buns: During the last 2 minutes, place buns cut-side down on the grill.
- Assemble the Hot Dogs: Spread Firecracker Sauce inside each toasted bun, add the hot dog, and top with cheese, onions, jalapeños, and cilantro.
