Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix dry ingredients in a large bowl: whisk together the flour, granulated sugar, baking powder, and salt.
- Combine wet ingredients in another bowl: mix the melted butter, milk, eggs, and vanilla extract until fully combined.
- Blend the wet mixture into the dry ingredients, stirring gently until just combined.
- Fold in the fresh cherries gently.
- Prepare the streusel topping by mixing brown sugar, flour, rolled oats, softened butter, and cinnamon in a separate bowl until crumbly.
- Fill the muffin cups two-thirds full with batter and sprinkle the streusel topping generously over each.
- Bake for 20-25 minutes, checking with a toothpick for doneness.
- Cool for a few minutes, then transfer to a wire rack.
Notes
Can be made ahead and refrigerated overnight for a fresh-baked feel in the morning. Substitutions like coconut oil for butter work well for different dietary needs.
