Description

Delightful muffins combining tart cherries and a buttery streusel topping, perfect for summer gatherings or a cozy breakfast.


Ingredients

  • 1 1/2 cups fresh cherries, pitted and halved
  • 1/2 cup brown sugar (for streusel)
  • 1/4 cup all-purpose flour (for streusel)
  • 1/4 cup rolled oats
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix dry ingredients in a large bowl: whisk together the flour, granulated sugar, baking powder, and salt.
  3. Combine wet ingredients in another bowl: mix the melted butter, milk, eggs, and vanilla extract until fully combined.
  4. Blend the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in the fresh cherries gently.
  6. Prepare the streusel topping by mixing brown sugar, flour, rolled oats, softened butter, and cinnamon in a separate bowl until crumbly.
  7. Fill the muffin cups two-thirds full with batter and sprinkle the streusel topping generously over each.
  8. Bake for 20-25 minutes, checking with a toothpick for doneness.
  9. Cool for a few minutes, then transfer to a wire rack.

Notes

Can be made ahead and refrigerated overnight for a fresh-baked feel in the morning. Substitutions like coconut oil for butter work well for different dietary needs.
