  • 0.5 cup purple cabbage (Thinly sliced)
  • 0.5 cup shredded carrots
  • 0.25 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 2 tbsp sour cream
  • 1 tbsp milk
  • 2 cloves garlic (Minced)

Instructions

  1. Prepare the Chicken: Begin by using a meat mallet to pound the chicken thighs to an even thickness. This promotes even cooking and ensures juicy, tender results. Season both sides with kosher salt and black pepper.
  2. Create the Glaze: In a mixing bowl, combine the honey, finely chopped chipotle peppers in adobo, and ketchup. Whisk until well-blended, creating a sticky, spicy glaze that will coat the chicken.
  3. Grill the Chicken: Heat a grill or grill pan over medium high heat. Add olive oil to the grill, then place the chicken thighs on it, cooking for about 4-5 minutes on each side. Brush with the honey-chipotle glaze during the last few minutes of grilling for an extra flavor punch.
