Instructions
- Start by frying your latkes according to your favorite recipe or warm pre-made ones in the oven.
- In a saucepan over low heat, gently warm your hollandaise sauce while stirring frequently.
- Fill a pot with softly simmering water, add a dash of vinegar, and crack the eggs into separate bowls.
- Gently slide each egg into the simmering water, cooking for about 3-4 minutes.
- On each plate, place one warm latke and crown it with a perfectly poached egg.
- Generously drizzle each egg with your warm hollandaise sauce.
- Finish with a sprinkle of fresh chives, salt, pepper, and paprika.
