Description

A delightful fusion of crispy latkes and perfectly poached eggs topped with creamy hollandaise sauce.


Ingredients

  • 4 large Latkes
  • 4 large Eggs
  • 1 cup Hollandaise Sauce
  • 2 tablespoons Chopped Fresh Chives
  • Salt and Pepper to taste
  • Paprika

Instructions

  1. Start by frying your latkes according to your favorite recipe or warm pre-made ones in the oven.
  2. In a saucepan over low heat, gently warm your hollandaise sauce while stirring frequently.
  3. Fill a pot with softly simmering water, add a dash of vinegar, and crack the eggs into separate bowls.
  4. Gently slide each egg into the simmering water, cooking for about 3-4 minutes.
  5. On each plate, place one warm latke and crown it with a perfectly poached egg.
  6. Generously drizzle each egg with your warm hollandaise sauce.
  7. Finish with a sprinkle of fresh chives, salt, pepper, and paprika.
