Description

A delightful taco bowl featuring crispy roasted potatoes, seasoned meat, black beans, corn, and fresh toppings that celebrate comfort food with bold flavors.


Ingredients

  • 4 large potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup corn
  • 1 cup black beans
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1 cup chopped fresh veggies (lettuce, bell peppers, etc.)
  • Sour cream (for serving)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dice the potatoes into small cubes. Toss them in olive oil, paprika, and salt.
  3. Spread evenly on a baking sheet and roast for 25-30 minutes, flipping halfway.
  4. Cook the ground meat in a skillet over medium heat, breaking it apart as it browns.
  5. Drain excess fat, stir in taco seasoning and a splash of water, then simmer for 5 minutes.
  6. Combine roasted potatoes, cooked meat, corn, black beans, and tomatoes in a large bowl.
  7. Layer the mixture in bowls and top with avocado, cheese, and fresh veggies.
  8. Garnish with sour cream and cilantro before serving.

Notes

Customize with your favorite toppings such as salsa or hot sauce and make it vegetarian by substituting meat with beans or veggies.
