- 4 large potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 cup corn
- 1 cup black beans
- 1 cup diced tomatoes
- 1 avocado, diced
- 1 cup shredded cheese
- 1 cup chopped fresh veggies (lettuce, bell peppers, etc.)
- Sour cream (for serving)
- Fresh cilantro (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dice the potatoes into small cubes. Toss them in olive oil, paprika, and salt.
- Spread evenly on a baking sheet and roast for 25-30 minutes, flipping halfway.
- Cook the ground meat in a skillet over medium heat, breaking it apart as it browns.
- Drain excess fat, stir in taco seasoning and a splash of water, then simmer for 5 minutes.
- Combine roasted potatoes, cooked meat, corn, black beans, and tomatoes in a large bowl.
- Layer the mixture in bowls and top with avocado, cheese, and fresh veggies.
- Garnish with sour cream and cilantro before serving.
