Description

A vibrant and flavorful dish combining succulent chicken thighs with a luscious mango sauce, perfect for any occasion.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 large ripe mango, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 small red chili, chopped
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1/2 cup chicken broth
  • 1/4 cup fresh cilantro, chopped
  • Salt and black pepper, to taste

Instructions

  1. Pat the chicken thighs dry with paper towels; season generously with salt and pepper.
  2. Preheat your oven to 375°F (190°C).
  3. Heat olive oil in an oven-safe skillet over medium-high heat, then place the chicken thighs skin-side down.
  4. Cook for 6-8 minutes until the skin is golden brown, then flip and cook for 2 more minutes.
  5. Transfer chicken to a plate and reduce the heat to medium.
  6. Add diced mango, garlic, ginger, and chili to the skillet; sauté for 2-3 minutes.
  7. Pour in chicken broth, soy sauce, honey, and lime juice; stir and mash the mango slightly.
  8. Simmer for 3-4 minutes until sauce thickens, then adjust seasoning as desired.
  9. Nestle chicken back in the skillet, skin-side up, and spoon sauce over the top.
  10. Bake for 12-15 minutes until internal temperature reaches 165°F (74°C).
  11. Let chicken rest for 5 minutes, then stir in cilantro before serving.

Notes

Marinate chicken overnight for extra flavor; feel free to customize with additional vegetables.
