- 4 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- 1 large ripe mango, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 small red chili, chopped
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp lime juice
- 1/2 cup chicken broth
- 1/4 cup fresh cilantro, chopped
- Salt and black pepper, to taste
Instructions
- Pat the chicken thighs dry with paper towels; season generously with salt and pepper.
- Preheat your oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet over medium-high heat, then place the chicken thighs skin-side down.
- Cook for 6-8 minutes until the skin is golden brown, then flip and cook for 2 more minutes.
- Transfer chicken to a plate and reduce the heat to medium.
- Add diced mango, garlic, ginger, and chili to the skillet; sauté for 2-3 minutes.
- Pour in chicken broth, soy sauce, honey, and lime juice; stir and mash the mango slightly.
- Simmer for 3-4 minutes until sauce thickens, then adjust seasoning as desired.
- Nestle chicken back in the skillet, skin-side up, and spoon sauce over the top.
- Bake for 12-15 minutes until internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes, then stir in cilantro before serving.
Notes
Marinate chicken overnight for extra flavor; feel free to customize with additional vegetables.
