- 600g (1.3lb) chicken breast, diced
- 30ml (2Tbsp) olive oil
- 15ml (1Tbsp) lemon juice
- 3 cloves garlic, minced
- 5g (1tsp) cumin
- 5g (1tsp) smoked paprika
- 2g (½tsp) sumac
- 4g (¾tsp) salt
- 1g (¼tsp) black pepper
- 8 corn tortillas
- 200g (¾cup) Greek yogurt
- 70g (½large) cucumber, grated and drained
- 1 clove garlic, minced
- 3g (1Tbsp) dill, chopped
- 1g (1tsp) mint, chopped
- 2g (½tsp) lemon zest
- ½tsp (2g) salt for tzatziki
- ¼tsp (1g) pepper for tzatziki
- 30g (2Tbsp) pickled red onion
- 20g (2Tbsp) pomegranate seeds
- 50g (1.8oz) feta cheese
- 5ml (1tsp) olive oil for drizzle
- Pinch sumac dust
- Handful of cilantro leaves, torn
Instructions
- Prepare the marinade: In a large mixing bowl, combine olive oil, lemon juice, minced garlic, cumin, smoked paprika, sumac, salt, and black pepper. Stir until fully blended.
- Marinate the chicken: Add the diced chicken to the marinade, stirring until each piece is well coated. Cover and refrigerate for 20 to 120 minutes.
- Make the tzatziki: While the chicken marinates, grate the cucumber and drain excess moisture. In another bowl, combine Greek yogurt, the drained cucumber, minced garlic, chopped dill, mint, lemon zest, salt, and pepper. Mix thoroughly and chill in the refrigerator for at least 10 minutes.
- Cook the chicken: Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for 4 to 5 minutes on each side, or until fully cooked through.
- Warm the tortillas: In a dry skillet, heat the corn tortillas for about 30 seconds on each side until pliable.
- Assemble your tacos: Layer each tortilla with a generous amount of cooked chicken, then add tzatziki, pickled red onion, pomegranate seeds, crumbled feta, cilantro, a drizzle of olive oil, and a pinch of sumac dust.
Notes
Marinate the chicken well in advance and always drain grated cucumbers to prevent tzatziki from becoming watery.
