- 2 garlic cloves (minced)
- 1 tbsp lemon juice (fresh)

- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
- 1 cup roasted chickpeas (optional for paleo or keto)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional for dairy-free)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh)
- 1 garlic clove (minced)
- 1 tbsp fresh dill (chopped)

Instructions
- Begin by preparing your marinade. In a bowl, mix together the olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper. Coat the sirloin steak generously in the marinade and marinate for at least 30 minutes.
- While the steak is marinating, whip up the tzatziki sauce by combining the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, and salt and pepper in a mixing bowl.
- Next, whisk together the vinaigrette ingredients: olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper, and set it aside.
- Heat a skillet or grill pan over medium-high heat. Once hot, sear the marinated steak for about 4-5 minutes per side, cooking to your desired doneness.
- After cooking, let the steak rest for a few minutes to allow juices to redistribute, then slice thinly against the grain.
- Layer your bowl starting with a base of cooked grains, followed by the sliced steak and topped with cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, tzatziki, and vinaigrette, garnishing with fresh herbs.
Notes
Prepare the tzatziki sauce a day in advance for better flavor. Marinate the steak overnight for maximum infusion. To enhance flavors, consider adding roasted vegetables like bell peppers or zucchini.
