Description

Ingredients

  • 4 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Fine sea salt
  • 1 tablespoon Granulated sugar (optional)
  • 1.75 cups Cold buttermilk
  • 4 tablespoons Irish butter (room temperature)
  • Additional Irish butter (for serving)

Instructions

  1. Preheat your oven to 425°F (218°C).
  2. Combine the flour, baking soda, salt, and sugar in a large mixing bowl.
  3. Add the cold buttermilk to the well in the center of the dry ingredients.
  4. Use a wooden spoon or dough scraper to mix until a shaggy dough forms.
  5. Transfer the dough to a lightly floured surface and gently knead it two or three times.
  6. Score the top with a sharp knife to allow steam to escape.
  7. Bake for about 30 minutes, until golden brown and sounds hollow when tapped.
  8. Cool slightly on a wire rack before slicing and spreading with creamy Irish butter.

Notes

For a nuttier flavor, substitute all-purpose flour with whole wheat flour. If buttermilk is unavailable, mix regular milk with vinegar to achieve similar tanginess.
