Description

A delightful salmon dish featuring a sweet and savory pineapple glaze that’s quick to prepare and perfect for any occasion.


Ingredients

  • 4 salmon fillets, approximately 6 ounces each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh or canned pineapple, diced and well drained
  • 1/4 cup packed light brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish large enough to hold the salmon fillets without crowding.
  3. In a small mixing bowl, whisk together the brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger (if using) until well combined.
  4. Pat the salmon fillets thoroughly dry with paper towels.
  5. Rub each fillet with olive oil, and season generously with salt and black pepper.
  6. Place the salmon fillets skin-side down in the prepared baking dish.
  7. Spoon about two-thirds of the pineapple glaze over each fillet and scatter the remaining diced pineapple around.
  8. Bake for 12 to 15 minutes, until the salmon is cooked through and flakes easily.
  9. For a caramelized finish, broil for an additional 1 to 2 minutes.
  10. Remove from the oven and let rest for 5 minutes before serving.
  11. Garnish with fresh parsley and serve warm.

Notes

For added flavor, let the glaze sit for a while in the fridge before using it. You can also customize the glaze with a bit of heat or swap pineapple with other fruits.
