Description

A delightful cake featuring sweet, juicy plums caramelized on top of a buttery and moist cake, perfect for any occasion.


Ingredients

  • 4 cups fresh plums, pitted and sliced
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan.
  3. Melt the butter in a saucepan over medium heat and stir in the brown sugar.
  4. Pour the caramelized mixture into the bottom of the cake pan, then arrange the sliced plums on top.
  5. Whisk together granulated sugar, eggs, and vanilla extract in a mixing bowl.
  6. Combine flour, baking powder, baking soda, and salt in another bowl.
  7. Gradually add the dry ingredients and buttermilk to the wet mixture until just combined.
  8. Pour the batter over the arranged plums.
  9. Bake for 40-45 minutes until a toothpick comes out clean.
  10. Cool for 10 minutes, then invert onto a serving plate.
