- 4 whole wheat or high-protein bagels, sliced
- 8 large eggs
- 2 tablespoons milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh chives (optional)
- 4 slices cheddar cheese (or Swiss or provolone)
- 4 tablespoons light cream cheese or Greek yogurt (optional)
- Handful fresh spinach or baby arugula leaves (optional)
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- Whisk together the eggs, milk, salt, pepper, and chives in a large bowl until well blended.
- Pour the egg mixture into a lightly greased 9×13-inch baking dish and bake for 12 to 15 minutes.
- Cool the baked egg slightly and cut it into 4 equal squares.
- Toast the bagels until golden brown.
- Spread 1 tablespoon of cream cheese or Greek yogurt on each bagel bottom.
- Layer a square of baked egg onto each bagel followed by a slice of cheese and fresh spinach.
- Top with the other half of the bagel and press gently.
- Wrap the sandwiches tightly for storage or refrigerate for up to 4 days.
- Reheat when ready to enjoy by microwaving or baking.
Notes
Make-ahead by preparing egg squares the night before and refrigerate. Add your favorite protein or vegetables to customize.
