Description

A tropical dessert featuring fried pineapple rings soaked in dark and coconut rums, coated with a crunchy coconut flake crust.


Ingredients

  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil, for frying
  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Soak the pineapple: Place the pineapple rings in a medium bowl. Cover them with dark and coconut rums for at least 1 hour. Drain and pat dry.
  2. Prepare the breading stations: Set up shallow bowls with flour, an egg mixture, and sweetened coconut flakes.
  3. Coat the pineapple: Dip each ring in flour, then the egg mixture, and finally in coconut flakes, pressing gently.
  4. Fry the pineapple: Heat vegetable oil to 350°F (175°C) and fry the rings for about 1 minute per side until golden. Drain on paper towels.
  5. Make the dipping sauce: Mix softened cream cheese and powdered sugar, adding reserved rum to adjust the consistency.

Notes

For a lighter version, try using an air fryer. Ensure to soak the pineapple for optimal flavor.
