- 6 oz Center Cut Bacon
- 1 medium White Onion
- 1 medium Poblano or Bell Pepper
- 2 cloves Garlic
- 1 lb Turkey Breakfast Sausage
- 1 packet Chili Seasoning
- 28 oz Fire Roasted Crushed Tomatoes
- 2 cups Beef Broth
- 4 large Eggs
- 1 medium Avocado
- 1 cup Pico de Gallo
- 1/2 cup Sour Cream
Instructions
- Prepare the Ingredients: Chop the bacon, onion, poblano pepper, and garlic.
- Cook the Bacon: In a large skillet, cook the chopped bacon until crispy, about 5–7 minutes.
- Sauté the Vegetables: Remove bacon, leaving grease. Add onions and cook for 2–3 minutes, then add peppers and garlic.
- Add the Turkey Sausage: Crumble into the skillet and cook until browned, about 6–8 minutes.
- Spice Things Up: Add the chili seasoning, stirring to coat the mixture.
- Incorporate Tomatoes and Broth: Add crushed tomatoes and beef broth, simmer for 15 minutes.
- Prepare the Eggs: Poach eggs in a separate pan or in the chili for 4–6 minutes.
- Plate and Serve: Ladle chili into bowls, top with poached eggs, avocado, sour cream, and pico de gallo.
Notes
For extra flavor, make the chili a day in advance and reheat. Customize with more veggies or beans if desired.
