Description

A hearty and flavorful breakfast chili featuring smoky bacon, turkey sausage, and topped with poached eggs, creamy avocado, and pico de gallo.


Ingredients

  • 6 oz Center Cut Bacon
  • 1 medium White Onion
  • 1 medium Poblano or Bell Pepper
  • 2 cloves Garlic
  • 1 lb Turkey Breakfast Sausage
  • 1 packet Chili Seasoning
  • 28 oz Fire Roasted Crushed Tomatoes
  • 2 cups Beef Broth
  • 4 large Eggs
  • 1 medium Avocado
  • 1 cup Pico de Gallo
  • 1/2 cup Sour Cream

Instructions

  1. Prepare the Ingredients: Chop the bacon, onion, poblano pepper, and garlic.
  2. Cook the Bacon: In a large skillet, cook the chopped bacon until crispy, about 5–7 minutes.
  3. Sauté the Vegetables: Remove bacon, leaving grease. Add onions and cook for 2–3 minutes, then add peppers and garlic.
  4. Add the Turkey Sausage: Crumble into the skillet and cook until browned, about 6–8 minutes.
  5. Spice Things Up: Add the chili seasoning, stirring to coat the mixture.
  6. Incorporate Tomatoes and Broth: Add crushed tomatoes and beef broth, simmer for 15 minutes.
  7. Prepare the Eggs: Poach eggs in a separate pan or in the chili for 4–6 minutes.
  8. Plate and Serve: Ladle chili into bowls, top with poached eggs, avocado, sour cream, and pico de gallo.

Notes

For extra flavor, make the chili a day in advance and reheat. Customize with more veggies or beans if desired.
