Description

A deliciously layered breakfast lasagna featuring savory sausage, fresh spinach, and gooey cheese, perfect for cozy family breakfasts or brunch gatherings.


Ingredients

  • 12 no-boil lasagna noodles
  • 4 large eggs
  • 1 cup milk
  • 1 pound sausage (pork or turkey)
  • 2 cups fresh spinach
  • 2 cups cheese (mozzarella, cheddar, or blend)
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Red pepper flakes, to taste

Instructions

  1. Brown the sausage in a skillet over medium heat, crumbling it until fully cooked.
  2. Add the spinach and cook until wilted, about 2-3 minutes.
  3. Whisk together eggs and milk in a mixing bowl, seasoning with salt, pepper, and garlic powder.
  4. Layer noodles in a greased baking dish, followed by the sausage-spinach mixture, egg mixture, and cheese. Repeat until ingredients are used, finishing with cheese.
  5. Bake at 375°F (190°C) for 30 minutes covered with foil, then remove foil and bake an additional 10-15 minutes until bubbly.
  6. Cool for 10 minutes before serving.

Notes
