- 4 large eggs
- 1 cup milk
- 1 pound sausage (pork or turkey)
- 2 cups fresh spinach
- 2 cups cheese (mozzarella, cheddar, or blend)
- Salt, to taste

- Garlic powder, to taste
- Red pepper flakes, to taste
Instructions
- Brown the sausage in a skillet over medium heat, crumbling it until fully cooked.
- Add the spinach and cook until wilted, about 2-3 minutes.
- Whisk together eggs and milk in a mixing bowl, seasoning with salt, pepper, and garlic powder.
- Layer noodles in a greased baking dish, followed by the sausage-spinach mixture, egg mixture, and cheese. Repeat until ingredients are used, finishing with cheese.
- Bake at 375°F (190°C) for 30 minutes covered with foil, then remove foil and bake an additional 10-15 minutes until bubbly.
- Cool for 10 minutes before serving.
