Description

Kick-start your day with a hearty and flavorful spicy chipotle egg breakfast sandwich, featuring creamy avocado and zesty chipotle aioli.


Ingredients

  • 1/2 cup Mayonnaise
  • 12 Chipotle Peppers in Adobo Sauce, minced
  • 1 tsp Adobo Sauce
  • 1 tbsp Lime Juice
  • 1 clove Garlic, minced
  • 4 Large Eggs
  • 2 Brioche Buns, sliced in half
  • 2 slices Pepper Jack Cheese
  • 1 Avocado, sliced or mashed
  • 1 cup Arugula
  • 1 tbsp Butter

Instructions

  1. Make the Chipotle Aioli: In a small bowl, combine the mayonnaise, minced chipotle pepper, adobo sauce, lime juice, and minced garlic. Stir gently until the mixture is smooth and well mixed. Set aside.
  2. Toast the Buns: Slice the brioche buns in half. In a large skillet, melt butter over medium heat. Place the buns cut-side down and toast them for 1-2 minutes until golden brown.
  3. Cook the Eggs: In the same skillet, add a pat of butter. Crack the eggs into the pan and cook them to your preferred doneness. Add a slice of Pepper Jack cheese on top just before finishing, allowing it to melt.
  4. Assemble the Sandwiches: Spread the chipotle aioli on the cut sides of both toasted buns. Layer fresh arugula, the cheesy egg, and avocado on the bottom bun before placing the top bun over the filling.

Notes

Prepare the chipotle aioli a day in advance for enhanced flavor. Toast buns just before assembling to prevent sogginess.
