Description

  • 1 large egg
  • ½ cup milk
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • For the optional spicy aioli: ½ cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon hot sauce
  • Fresh cilantro leaves for garnish
  • Lime wedges for garnish
  • Crumbled cotija cheese for garnish

Instructions

  1. Roast the corn kernels until they possess a delightful char, about 10-15 minutes.
  2. Prepare the corn bite batter by combining all dry ingredients with the roasted corn and jalapeños.
  3. Whisk together the egg and milk in a separate bowl, then mix into the dry ingredients.
  4. Heat oil in a frying pan over medium heat and scoop tablespoon-sized portions into the hot oil, frying until golden brown, about 3-5 minutes per side.
  5. Make the spicy aioli by whisking together the ingredients in a small bowl.
  6. Serve the bites warm, garnished with cilantro, cotija cheese, and lime wedges.

Notes

You can make the batter in advance and store it in the fridge for up to a few hours. For a healthier option, try air frying the bites.
