Description

Crispy and flavorful Spicy Potatoes tossed in a zesty dressing, offering a delightful balance of heat and freshness.


Ingredients

  • 4 medium Yukon Gold Potatoes
  • 4 cloves Garlic, minced
  • ¼ cup Cilantro, chopped
  • 12 tsp Red Pepper Flakes
  • 2 tbsp Lemon Juice, freshly squeezed
  • 3 tbsp Olive Oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel and cut the potatoes into even cubes.
  2. Bring a pot of salted water to a boil and add the potato cubes. Boil for about 10 minutes until tender.
  3. Drain the potatoes and let them cool slightly.
  4. Combine minced garlic, cilantro, red pepper flakes, lemon juice, olive oil, salt, and pepper in a large mixing bowl.
  5. Toss the slightly cool potatoes in the seasoning mixture until well coated.
  6. Heat oil in a skillet over medium heat and add the seasoned potatoes.
  7. Fry the potatoes, turning occasionally until crispy and golden brown, about 8-10 minutes.
  8. Serve immediately while hot and crispy.

Notes

For variations, use parsley instead of cilantro or sweet potatoes instead of Yukon Gold. Store leftovers in an airtight container for up to 3 days.
