Ingredients

- 4 medium Yukon Gold Potatoes
- 4 cloves Garlic, minced
- ¼ cup Cilantro, chopped
- 1–2 tsp Red Pepper Flakes
- 2 tbsp Lemon Juice, freshly squeezed
- 3 tbsp Olive Oil
- Salt to taste
- Pepper to taste
Instructions
- Peel and cut the potatoes into even cubes.
- Bring a pot of salted water to a boil and add the potato cubes. Boil for about 10 minutes until tender.
- Drain the potatoes and let them cool slightly.
- Combine minced garlic, cilantro, red pepper flakes, lemon juice, olive oil, salt, and pepper in a large mixing bowl.
- Toss the slightly cool potatoes in the seasoning mixture until well coated.
- Heat oil in a skillet over medium heat and add the seasoned potatoes.
- Fry the potatoes, turning occasionally until crispy and golden brown, about 8-10 minutes.
- Serve immediately while hot and crispy.
Notes
For variations, use parsley instead of cilantro or sweet potatoes instead of Yukon Gold. Store leftovers in an airtight container for up to 3 days.
