- 1 large flour tortilla or wrap

Instructions
- Preheat your oven to 375°F (190°C) while preparing the filling.
- Whisk together the eggs, milk, salt, and black pepper in a mixing bowl until slightly frothy.
- Sauté the spinach in a non-stick skillet with olive oil or butter over medium heat for 2-3 minutes until wilted.
- Combine the egg mixture with the sautéed spinach and diced ham, cooking for 3-5 minutes until eggs are set but soft.
- Assemble the roll by placing the egg mixture down the center of a flat tortilla and topping with shredded cheese.
- Roll the tortilla tightly from the bottom, tucking in the edges.
- Bake for 10-15 minutes until the tortilla is golden and crispy, if desired.
- Slice and serve warm, garnished with fresh herbs if desired.
