Description

A delightful handheld breakfast featuring sautéed spinach, savory ham, and creamy cheese wrapped in a warm tortilla, perfect for any morning.


Ingredients

  • 1 cup fresh spinach, chopped
  • 4 large eggs
  • 1/4 cup milk
  • 1 cup diced cooked ham
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • 1 large flour tortilla or wrap
  • Optional: Fresh herbs for garnish (such as parsley or chives)

Instructions

  1. Preheat your oven to 375°F (190°C) while preparing the filling.
  2. Whisk together the eggs, milk, salt, and black pepper in a mixing bowl until slightly frothy.
  3. Sauté the spinach in a non-stick skillet with olive oil or butter over medium heat for 2-3 minutes until wilted.
  4. Combine the egg mixture with the sautéed spinach and diced ham, cooking for 3-5 minutes until eggs are set but soft.
  5. Assemble the roll by placing the egg mixture down the center of a flat tortilla and topping with shredded cheese.
  6. Roll the tortilla tightly from the bottom, tucking in the edges.
  7. Bake for 10-15 minutes until the tortilla is golden and crispy, if desired.
  8. Slice and serve warm, garnished with fresh herbs if desired.

Notes

Make-Ahead: Prepare the filling the night before and refrigerate. Reheat to assemble in the morning. Be careful not to overcook the eggs for best texture.
