Description

Delicious marinated skirt steak perfect for grilling, boasting a tender texture and robust flavor.

Ingredients

Scale
  • 1 lb skirt steak
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh lime or lemon juice
  • 1 tbsp honey or brown sugar
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper

Instructions

  1. Prepare the marinade: In a mixing bowl, whisk together soy sauce, olive oil, minced garlic, fresh citrus juice, honey, and spices until well combined.
  2. Marinate the steak: Place your skirt steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it covers all surfaces. Seal or cover and refrigerate for 30 minutes (or up to overnight for a more intense flavor).
  3. Preheat the grill: Get your grill hot, aiming for a high temperature suitable for searing meat.
  4. Grill the steak: Remove the steak from the marinade and let any excess drip off. Place it on the grill and cook for about 3–5 minutes on each side for medium-rare, depending on the thickness. Use tongs to flip but avoid piercing the meat.
  5. Check for doneness: Use a meat thermometer for precision. Aim for 130°F for medium-rare.
  6. Rest the steak: Once cooked to perfection, remove it from the heat and let it rest for about 5-10 minutes to allow the juices to redistribute.
  7. Slice and serve: Cut against the grain into thin slices for optimal tenderness, allowing juices to flow beautifully.

Notes

Marinating for at least 30 minutes enhances flavor, but overnight is even better. Let steak reach room temperature before cooking for even results.
