- 7 oz dark chocolate (70% cocoa), finely chopped
- 3.5 fl oz heavy cream
- 0.88 oz unsalted butter, at room temperature
- 1 tsp vanilla extract
- 4.2 oz fresh strawberries, hulled and chopped
- 2 tsp granulated sugar
- 1 tsp fresh lemon juice
- 3.5 oz dark chocolate, melted for dipping
- 2 tbsp freeze-dried strawberry powder
- Edible gold dust for decoration
Instructions
- Prepare Strawberry Purée by cooking the strawberries, sugar, and lemon juice until thick, then blend until smooth.
- Make Chocolate Ganache by heating the heavy cream, then pouring it over the chocolate and stirring until smooth.
- Combine the cooled purée with the ganache until thoroughly blended.
- Shape truffles by portioning the ganache into balls and rolling them smooth.
- Coat each truffle in melted chocolate and sprinkle with strawberry powder and gold dust.
- Set and store the truffles in an airtight container in the refrigerator.
