Description

Decadent chocolate meets the sweetness of fresh strawberries in these delightful truffles, encapsulating a perfect harmony of flavors.


Ingredients

  • 7 oz dark chocolate (70% cocoa), finely chopped
  • 3.5 fl oz heavy cream
  • 0.88 oz unsalted butter, at room temperature
  • 1 tsp vanilla extract
  • 4.2 oz fresh strawberries, hulled and chopped
  • 2 tsp granulated sugar
  • 1 tsp fresh lemon juice
  • 3.5 oz dark chocolate, melted for dipping
  • 2 tbsp freeze-dried strawberry powder
  • Edible gold dust for decoration

Instructions

  1. Prepare Strawberry Purée by cooking the strawberries, sugar, and lemon juice until thick, then blend until smooth.
  2. Make Chocolate Ganache by heating the heavy cream, then pouring it over the chocolate and stirring until smooth.
  3. Combine the cooled purée with the ganache until thoroughly blended.
  4. Shape truffles by portioning the ganache into balls and rolling them smooth.
  5. Coat each truffle in melted chocolate and sprinkle with strawberry powder and gold dust.
  6. Set and store the truffles in an airtight container in the refrigerator.

Notes

Use high-quality chocolate for the best flavor. Customize with nuts or spices for variety.
