Description

Deliciously soft muffins filled with juicy strawberries and a creamy center, perfect for breakfast or a sweet snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  3. Beat together the softened butter, milk, eggs, and vanilla extract in another bowl until smooth.
  4. Add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chopped strawberries with a rubber spatula.
  6. Mix the softened cream cheese with powdered sugar in a small bowl until smooth.
  7. Fill each muffin cup with half of the batter, spoon a teaspoon of cream cheese mixture in the center, then top with remaining batter.
  8. Bake for 20 to 25 minutes, or until a toothpick comes out clean.
  9. Cool slightly before serving.

Notes

Muffins can be made-ahead and refrigerated overnight. For a twist, add lemon zest or chocolate chips.
