- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
- Beat together the softened butter, milk, eggs, and vanilla extract in another bowl until smooth.
- Add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped strawberries with a rubber spatula.
- Mix the softened cream cheese with powdered sugar in a small bowl until smooth.
- Fill each muffin cup with half of the batter, spoon a teaspoon of cream cheese mixture in the center, then top with remaining batter.
- Bake for 20 to 25 minutes, or until a toothpick comes out clean.
- Cool slightly before serving.
Notes
Muffins can be made-ahead and refrigerated overnight. For a twist, add lemon zest or chocolate chips.
