- 4 cups Sweet Potatoes, cubed
- 2 tablespoons Olive Oil
- 1 teaspoon Smoked Paprika
- Salt and Pepper, to taste
- 1 pound Ground Beef
- 2 tablespoons Taco Seasoning
- 1 cup Pico de Gallo
- 1 cup Guacamole
- 1/2 cup Sour Cream
- Optional: crumbled cheese, lime wedges, tortilla chips
Instructions
- Preheat the oven to 425°F (220°C).
- Toss sweet potatoes with olive oil, smoked paprika, salt, and pepper in a mixing bowl.
- Roast sweet potatoes for 25–30 minutes, tossing halfway through until tender and caramelized.
- Heat a skillet over medium heat, then add ground beef and cook until browned.
- Mix in taco seasoning and simmer for about 5 minutes.
- Assemble bowls by layering roasted sweet potatoes and seasoned ground beef.
- Top with pico de gallo, guacamole, sour cream, and any optional toppings.
Notes
Make-ahead tips include roasting sweet potatoes a day in advance. Ensure not to overcrowd the baking sheet for best results.
