Description

A colorful and comforting Sweet Potato Taco Bowl with spiced ground beef, roasted sweet potatoes, and fresh guacamole.


Ingredients

  • 4 cups Sweet Potatoes, cubed
  • 2 tablespoons Olive Oil
  • 1 teaspoon Smoked Paprika
  • Salt and Pepper, to taste
  • 1 pound Ground Beef
  • 2 tablespoons Taco Seasoning
  • 1 cup Pico de Gallo
  • 1 cup Guacamole
  • 1/2 cup Sour Cream
  • Optional: crumbled cheese, lime wedges, tortilla chips

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss sweet potatoes with olive oil, smoked paprika, salt, and pepper in a mixing bowl.
  3. Roast sweet potatoes for 25–30 minutes, tossing halfway through until tender and caramelized.
  4. Heat a skillet over medium heat, then add ground beef and cook until browned.
  5. Mix in taco seasoning and simmer for about 5 minutes.
  6. Assemble bowls by layering roasted sweet potatoes and seasoned ground beef.
  7. Top with pico de gallo, guacamole, sour cream, and any optional toppings.

Notes

Make-ahead tips include roasting sweet potatoes a day in advance. Ensure not to overcrowd the baking sheet for best results.
