Description

  • 1 medium tomato (diced)
  • 1 small jalapeño pepper (seeded and diced)
  • 1 tablespoon lime juice
  • Salt and pepper (to taste)
  • 8 slices thick-cut bacon (divided)
  • 1 pound ground pork sausage
  • 4 slices sharp cheddar cheese (divided)
  • 4 large eggs (fried, divided)
  • 1 tablespoon unsalted butter
  • 4 onion bagels (toasted)
  • ½ cup cowboy butter, softened (divided)

Instructions

  1. Prepare the Pico de Gallo: In a small bowl, gently mix together the diced tomato, jalapeño, lime juice, and a pinch of salt and pepper. Allow to marinate.
  2. Cook the Bacon and Sausage: In a large skillet, lay out bacon strips and sizzle until crispy. Transfer bacon to paper towel. Add sausage to the same skillet and cook until browned, about 6 to 8 minutes.
  3. Toast the Bagels: Slice onion bagels in half and toast until golden brown. Spread cowboy butter on each half.
  4. Assemble the Bagels: On the bottom half of each bagel, layer two slices of crispy bacon, followed by cooked sausage, cheese, fried egg, and pico de gallo. Cap with the top half of the bagel.

Notes

For a healthier option, consider using turkey sausage and adjust cooking times as necessary. Make pico de gallo a day ahead for enhanced flavors.
